Cheesy Meat Loaf

Ingredients
- Meat Loaf:
- 2 large eggs
- 2 Tbsp chopped green bell pepper
- 2 Tbsp chopped onion
- 2 Tbsp sour cream
- 2 Tbsp Worcestershire sauce
- 1-1/2 tsp Paula Deen's House Seasoning
- 1-1/2 tsp seasoned salt
- 2-1/2 lbs ground beef
- 1 (8 oz) package Cheddar cheese, shredded
- Cheese Sauce:
- 1/4 c unsalted butter
- 1/4 c all-purpose flour
- 1/4 tsp garlic powder
- 2 c cups half-and-half
- 1/2 c heavy whipping cream
- 1 Tbsp hot sauce
- 2 tsp chicken base
- 1-1/2 tsp dried parsley
- 1 tsp Worcestershire sauce
- 3/4 tsp powdered mustard
- 1/2 tsp kosher salt
- 1/4 tsp ground white pepper
- 1 (8 oz) package Cheddar cheese, shredded
- We did not use the cheese sauce - but loved the meatloaf without it!!

Preparation
Step 1
Preheat oven to 350º. Line a large rimmed baking sheet with foil; place a wire rack on foil.
In a large bowl, whisk together eggs, bell pepper, onion, sour cream, Worcestershire, House Seasonings, and seasoned salt.
Stir in beef and cheese until well combined.
Shape mixture into 4 (5x3-inch) loaves on prepared rack.
Bake until a thermometer inserted in thickest portion registers 165º - 45 - 50 minutes.
Let stand for 5 minutes; slice and serve with cheese sauce.
Cheese Sauce:
In a large saucepan, melt butter over medium heat. Add flour and garlic powder; cook, whisking constantly, for 2 minutes.
Gradually whisk in half-and-half and cream until smooth.
Whisk in hot sauce, chicken base, parsley, Worcestershire sauce, mustard, salt and pepper until combined.
Cook, whisking constantly, until thickened, about 5 minutes. Remove from heat, and gradually whisk in cheese until melted and smooth. Serve warm with meat loaf.
