Ingredients

  • 1 1/4 cups P.A.N. Pre-cooked White Corn Meal
  • 3 eggs
  • 1 cup sugar
  • 2/3 cup olive oil
  • 1 tablespoon lemon juice
  • 3/4 cup milk
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder

Preparation

Step 1

Pre-heat oven to 350 °F. Grease a round baking mold, with a hole in the center, with butter and sprinkle flour. Set aside.
Whisk eggs and sugar in a bowl. Slowly pour olive oil, lemon juice and milk.
Mix P.A.N. Pre-cooked White Corn Meal in a separate bowl with lemon zest and baking powder. Add to the egg mixture, whisking slowly until homogeneous.
Pour batter into the mold and bake for 40-50 minutes. Insert a toothpick in the cake to make sure it is ready, it should come out clean.
