Ingredients

  • 1

    can diced tomatoes, drained

  • 2

    ripe avocados, mashed

  • 1

    T lime juice

  • 1

    T sweet chili sauce

  • 1

    T oil

  • 2

    small red onions, diced

  • 2

    tsp. ground oregano

  • 2

    tsp. ground cumin

  • ¼

    tsp. chili powder

  • 1

    T tomato paste

  • 1

    c. dry white wine

  • 2

    (15½ oz) cans red kidney beans

  • 3

    T. cilantro

  • Corn chips

  • Shredded cheese

  • Sour cream

  • Pea shoots

Directions

1. Mix together the avocado, lime juice, and sweet chili sauce 2. Heat the oil in a large frying pan. Cook the onion, oregano, cumin, and chili powder over medium heat for 2 minutes. Add tomatoes, tomato paste, and wine, and cook for 5 minutes or until the liquid reduces. Add the beans and cilantro. 3. Add the corn chips to a pan. Top with the bean mixture. Sprinkle with cheese. Flash under a broiler until the cheese melts. Serve with the avocado mixture, sour cream, and pea shoots.
