- 3 Tbsp vegetable oil
- 1 small red onion, sliced
- 1 can (8 ounce) sauerkraut, drained
- 1 tsp caraway seeds
- 1 6-" round loaf, about 10 oz
- 4 oz thinly sliced corned beef
- 4 oz sliced Swiss cheese
- 1/4 C bottled Russian dressing

Step 1
In a 2-quart saucepan, heal oil over medium heat, add onion and cook 5 minutes until tender. Add sauerkraut and caraway seeds; cook 5 minutes until heated through, stirring occasionally. Preheat oven to 400 degrees F. Meanwhile, slice bread horizontally to remove top of bread. With spoon, remove centre of bread leaving 1/2"-thick side and bottom; if desired, reserve bread centre for bread crumbs. With fingers, scoop out bread centre from lid (top). Arrange corned beef on bottom of bread, folding slices to fit. Add cheese, then sauerkraut mixture. Replace bread lid. Wrap bread in foil; bake 30-40 minutes. To serve, unwrap bread. Cut loaf into 4 pieces. Serve with Russian dressing.
