Ingredients
- 1/2 cup heavy whipping cream
- 2 tbs of sugar
- 1/2 tsp of instant coffee
- 1/2 tsp vanilla extract
- 8 2 1/2 inch chocolate wafer cookies. I used chocolate graham crackers

Preparation
Step 1
Combine all ingredients and beat until stiff peaks form.
Later one cracker and using a star tip and pastry bag, pipe some icing onto cracker. Place another cracker on top and do this for 8 layers. Pipe icing in rows, across top and sides of cake. Refrigerate over night or 6 hours at least. Make these on a flat plate that can be covered. Also, can be doubled across, and the lengthwise to make a long cake. This gets soft like a cake after 6 hours or over night
** 1 pint of whipping cream can make 4 Small cakes
