Ingredients

  • 1 10-oz. pkg. frozen chopped spinach
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 2 eggs, lightly beaten
  • 1/3 cup milk
  • 3 Tbs. finely chopped onion
  • 2 Tbs. fresh minced parsley
  • 2 Tbs. softened butter or margarine
  • 1/2 tsp. salt
  • 1/2 tsp. Worcestershire sauce
  • 1/4 tsp. dried thyme
  • 1/8 to 1/4 tsp. nutmeg

Preparation

Step 1

Preheat to 350°
Cook spinach according to package directions, and drain well. Add rice, cheese, eggs, milk, onion, parsley, butter, salt, Worcestershire, thyme and nutmeg. Mix well. Transfer to greased 1 qt. baking dish. Cover and bake for 20 minutes. Uncover and bake 20 to 25 minutes longer or until a knife inserted near center come out clean.
