Ingredients
- 3 carrots, grated extra fine
- 1 cup flour
- 1/4 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- dash of salt
- 1/2 cup sugar
- 1 cup crushed pineapple-undrained
- 1 egg
- 3 tbsp. oil
- 1/4 cup light brown sugar
- 1/4 cup chopped nuts

Preparation
Step 1
1. Preheat oven to 375 degrees.
2. Combine the first ten ingredients in a bowl. Mix until smooth. Divide batter into 24 well greased mini muffin tins.
3. Combine brown sugar and nuts and sprinkle on top of muffins. Bake for 15 minutes.
