Ingredients
- Variations:
- 8 ounces cubed boneless skinless chicken breast
- generous pinch kosher salt
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1 tablespoons homemade taco spice mix (Taco Potion #19)
- 1/4 teaspoon tomato paste
- Replace lime juice with lemon juice and taco blend with 1 teaspoon harissa paste or 2 teaspoons ras el hanout or 2 teaspoons Weber Chili Lime Rub or other spice blend.
- Leave out lime juice and replace taco spice with 1 heaping teaspoon PC Garam Masala blend

Step 1
Marinate the chicken with the remaining ingredients in a ziplock bag in the fridge for 15 minutes to 3 days. Remove from the fridge about 1 hour before you're ready to cook it.
Place the chicken pieces, with their marinade, in the ActiFry bowl and cook for 10 - 12 minutes until just cooked through (no longer!).
I served it with cilantro/lime rice which was a good fit. It would also be good in a taco salad or a tortilla or even over instant grits.
