Ingredients

  • 2 teaspoons cornstarch
  • 1 tablespoon cold water
  • 3 teaspoons olive oil, divided
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 garlic clove, minced
  • 3 tablespoons honey
  • 2 tablespoons reduced-sodium soy sauce
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 package (16 ounces) frozen broccoli stir-fry vegetable blend
  • Hot cooked rice

Preparation

Step 1

In a small bowl, mix cornstarch and water until smooth. In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Add chicken and garlic; stir-fry 1 minute. Add honey, soy sauce, salt and pepper; stir-fry 2-3 minutes longer or until chicken is no longer pink. Remove from pan.

In same pan, stir-fry vegetable blend in remaining oil 4-5 minutes or just until tender. Return chicken mixture to pan. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1 minute or until thickened. Serve with rice.
