- 1 cup flour
- 1 cup cornmeal
- 2 ⁄3 cup sugar
- 1 teaspoon salt
- 3 1⁄2 teaspoons baking powder
- 2 eggs
- 1 cup milk
- 1 ⁄3 cup vegetable oil
- 1 ⁄3 cup honey

Preheat oven to 400 deg.
Combine all ing. in mixing bowl and mix with electric mixer for about 2 minute.
Pour into greased 8-8" glass baking dish and bake for 20-25 minute or until toothpick inserted in center comes out clean.

For anyone who missed my original post. I double stacked half-pints of cornbread on top of qts of turkey stock in my pressure canner as an experiment. They looked good cooked in the jars and sealed really well last night.
This morning I couldn't wait any longer! They are really good. Easy to get out of the jar by running a butter knife around the edge. I did butter the jars first also. Very very slight roasted corn flavor and slightly denser than oven baked. Warmed for about 10 seconds, and it is pretty tasty!
I put 4oz of the cornbread batter into 10 half-pint jars (buttered the sides first). Used a rack on top of the qts and stacked the half-pints on top. Pressure canned them together for the normal 25 minutes for broth.
This is my corn bread recipe and I made a double batch for this.
** I use less baking powder and add buttermilk or clabbered cream along with the milk.
