Sausage Strata

Ingredients
- 16 oz breakfast link sausage, sliced into small rounds
- 1/3 c butter, softened, or as needed
- 12 english muffins, split
- 12 oz shredded sharp Cheddar cheese, divided
- 8 oz shredded provolone cheese, divided
- 8 large eggs
- 1-1/2 c sour cream
- 1 c chopped green bell pepper

Preparation
Step 1
Heat a large skillet over medium-high heat.
Add sausage and cook, stirring, until each piece is browned on both sides, about 10 minutes.
Lightly grease a 13 x 9 inch baking dish. Spread butter on the inside of each English muffin half.
Arrange 6 of the English muffin halves buttered side down in the prepared baking dish. Top with half of the sausage, half the Cheddar and half the provolone.
In a large bowl, whisk eggs, sour cream and bell pepper together; pour evenly over the sausage and cheese layer. Top with the remaining muffin halves, sausage, Cheddar and provolone.
Cover and refrigerate overnight.
Preheat oven to 375º. Bake the strata until lightly browned and set in the meddle, about 45 minutes, covering the pan if necessary to prevent overbrowning.
