Ingredients
- Palomilla Steaks
- Tomato Sauce (Jar of good Tomato Sauce)
- 1/2 Cup Dry Sherry
- 1 Bay Leaf
- 1 tsp Salt
- 1/4 tsp Sugar
- 1 tsp Oregano
- A few drops of Hot Sauce
- 2 Hard Cooked Eggs
- 2 Tbs minced Parsley
- Pimentos
- 1 Can Petit Peas
- 1 Cup Shredded Mozzarella Cheese

Preparation
Step 1
Fry Steaks in Olive Oil until browned, remove and set aside.
In a sauce pan, combine tomato sauce, sherry, bay leaf, salt, oregano, sugar and hot sauce. Bring to a boil, lower heat, and simmer for 10 minutes uncovered. Add 2 Tbs of drippings where steaks were browned. Cook 5 minutes longer.
Put a little of the sauce on the bottom of a casserole dish, put in steaks, top with a little sauce, sprinkle with peas, crumpled eggs, pimentos, and parsley. Put remaining sauce on top. Top with Mozzarella Cheese.
Bake in 300 degree oven for 30 minutes or until cheese is melted.
Serve with Yellow Rice and Black Beans
