Tom's Vegetable Soup

This is my own recipe. After making veggie soup a number of times, i have fine tuned it to this recipe.

Ingredients
- 2 Tbsp olive oil
- 2 (32oz) vegetable stock
- 2 cubes vegetable bouillon, (if you are not vegetarian, chicken bouillon will substitute)
- 12 oz tomato juice
- 1 cup water
- 1 medium onion, sliced thin
- 2 cloves garlic, minced
- 2 celery stalks, or 3 small stalks, sliced
- 4 carrots, sliced into 1/2 inch rounds
- 2 zucchini, seeds removed and thick diced
- 1 1/2 cup cauliflower
- 1 cup green beans OR romanescu
- 3 tsp paprika
- 2 tsp garlic powder
- 1 tsp black pepper
- 2 tsp salt
- 1 tsp onion powder
- 1 tsp cayenne
- 1 tsp ground oregano
- 1 tsp dry oregano
- 1 tsp dry thyme
- 1/2-1 cup long grain white rice

Preparation
Step 1
1. Heat olive oil in large saucepan. Once heated, add sliced onion and garlic. Cook for 5-7 minutes, stirring occasionally.
2. Add the stock, bouillon, tomato juice, celery, carrots, zucchini, cauliflower, green beans OR romanescu and all of the spices.
3. Bring to a boil. Turn the heat down to a simmer, cover and cook until vegetables are tender (around 15 minutes).
4. Add the rice and cook until tender
Serve immediately
