- 1 tbsp extra virgin olive oil
- 453 g beef cubes (1 lb)
- 1 Large onion, , sliced in sticks
- 3 Cloves garlic , crushed
- 1/4 Cup red wine
- 2 Cups sodium-reduced beef stock
- 2 tbsp tomato paste
- 1/2 tsp salt , plus more
- 1/4 tsp pepper , plus more

Step 1
Set your Instant Pot to sauté and add in the olive oil, when it’s hot add the beef cubes; season with salt and pepper.
Brown the beef (working in batches if needed).
Add in the red wine, gently scraping the bottom of the pot to release any yummy bits.
Then add in the onion, garlic, stock, tomato paste, the 1/2 salt and 1/4 tsp pepper; mix well.
Cover with the lid and lock it, ensure the valve is set to venting and then set the pot to manual for 45 minutes.
Do a quick release.
Taste and adjust seasoning before serving on your favourite bread.
