Ingredients

  • 8 chicken thigh fillets
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 2 Tbsp butter
  • 1/4 cup crunchy peanut butter
  • 1/2 cup chicken stock
  • 1/4 cup honey
  • 2 teaspoons grainy mustard
  • 1 teaspoon curry powder
  • Pinch cardamom
  • Dash Tabasco sauce

Preparation

Step 1

1. Trim fat from chicken.
2. Combine onion, garlic and butter in skillet, cook on HIGH for 3 minutes.
3. Stir in peanut butter, stock, honey, mustard, curry, cardamom and Tabasco.
4. Add chicken in single layer. Cook for 6 minutes; turn chicken and cook an additional 6 minutes.
5. Serve with rice, or Kevin's beautiful mashed potatoes. Serves 4, unless you are really hungry.
