German Potato Salad for 2 0 Picture

Ingredients

  • 1 cn sliced new potatoes
  • 3 slices bacon
  • 1 T butter
  • 1/2 T cornstarch
  • 1 1/2 T sugar....maybe a little more
  • 1/4 C reserved potato water
  • 2 1/2 T white wine vinegar
  • 1/4 C sliced green onions
  • salt and pepper to taste

Preparation

Step 1

Drain potatoes and reserve liquid. Cut slices into bite size pieces.
Slice bacon into 1/4 inch pieces. Cook until brown, let bacon cool on paper toweling and drain grease from pan.
Melt butter, add cornstarch sugar water and vinegar to skillet. Cook over medium heat until thickened.
Add potatoes onions, and bacon to skillet and cook until warm.
