Ingredients
- 2 cups self rising flour, or use regular flour with 2 t. baking powder
- 1/2 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1 stick margarine or butter
- 1/2 cup dried fruit, raisins, dried cranberries (optional) I sometimes use the orange cranberries from Trader Joe's

Step 1
Preheat oven to 392 degrees. Place baking sheet in oven to preheat.
1. Add flour and butter to bowl and mix using fingertips or 2 knives
2. Add sugar and mix together
3. Add dried fruit and mix
4. Mix together buttermilk and beaten eggs in separate bowl
5. Make a well in the dry ingredients, Add 1/2 of the buttermilk and egg mixture, add more if needed to make a dough that sticks together. Be careful not to add too much liquid!
6. lift the dough out of the bowl and place on a lightly floured surface, knead lightly and bring to a circular shape
7. Turn over, smooth side on top and press to the depth of scone cutter, about 2 inches
8. Dip cutter in flour before cutting scones to prevent sticking, if you do not have a cutter a glass will work.
9. Place scones on baking sheet & place in the oven. Check after 20 minutes.
10. Scones are baked when they are a golden brown colour. Serve with jam and whipped cream.
