Ingredients

  • 500 grams baby potatoes, washed and halved
  • 1 head garlic, separated into cloves and peeled
  • 1 tablespoon duck fat
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon minced fresh thyme leaves
  • 1/2 tablespoon of Za'atar
  • 1/2 teaspoon Maldon salt
  • freshly ground black pepper
  • 1 tablespoon good olive oil

Preparation

Step 1

Soak the potatoes in cold water until 1/2 hour before cooking. Drain well and dry with paper towels.

Melt the duck fat in the Actifry pan for a minute if necessary. Add the potatoes and set the timer for 60 minutes.

After 20 minutes, add the garlic cloves and continue cooking.

Meanwhile, whisk the olive oil, lemon juice, mustard, thyme, salt, pepper and Za'atar in the bowl you soaked the potatoes in.

When the potatoes are done to your liking (about 45-50 minutes from when you started them) remove the cooked potatoes and garlic to the bowl and toss with the vinaigrette.
