Ingredients

  • 8 slices baguette
  • 1 splash olive oil
  • 1 sprinkle salt and pepper
  • 2 cups Emmentaler cheese, some grated, some sliced
  • 4 tablespoons butter
  • 12 large onions, thinly sliced
  • 1/2 cup sherry
  • 6 cups real chicken broth
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 tablespoon or so sherry vinegar
  • 4 sprigs fresh thyme

Preparation

Step 1

Preheat your oven to 375ºF and turn on your convection fan if you have one.

Lay the baguette slices on a baking tray and drizzle olive oil over each and sprinkle with salt and pepper. Toast in the oven until they are evenly golden brown and crusty, about 15 minutes. Turn your oven to broil.
