Cranberry-Ginger Dressing

Ingredients
- 1/2 cup cranberries
- 1/4 cup red wine vinegar
- 1/4 cup sugar
- 2 tablespoons ginger peeled, fine julienne
- 1 tablespoon salt
- 1/4 cup olive oil

Preparation
Step 1
Combine first 5 ingrgedients in a small pot and mix well. Bring to a boil and remove from heat. Let cool at room temp and add olive oil.
To serve -- Warm beets in a saute pan with a little h2o and season gently with salt. Spoon into a large bowl and scatter with the cranberry dressing. Garnish with chervil.
