Creamy Mushroom Ham Pasta

Ingredients

  • 2 tablespoons olive oil
  • 1 1/4 cups chopped mushrooms
  • 1 tsp. dried parsley or 3 or 4 sprigs fresh
  • 1 tsp. oregano
  • 1/4 cup water
  • 1 cup chopped ham
  • 1 cup heavy cream
  • 1 tbsp. flour
  • 3 cups cooked short pasta (about 6 oz.)

Preparation

Step 1

1. In large frying pan add olive oil, mushrooms, parsley, oregano and water; cook "almost covered" on medium heat stirring occasionally till mushrooms are cooked and water has almost evaporated(about 10-15 minutes).
2. While mushrooms are cooking boil and cook pasta al dente.
3. Once mushrooms are cooked add ham and mix together. Then add cream and flour and cook on medium high heat stirring constantly until sauce thickens.
4. Add pasta; toss gently and serve immediately with freshly grated parmesan cheese if desired.
