Ingredients
- To thicken:
- 1 teas. parsley
- 2 stalks celery chopped
- 1 carrot chopped
- 1 lg. onion chopped
- 1/4 red pepper chopped
- 6-7 lg. potatoes peeled and diced and cooked
- 1 1/2 qts. milk
- 4 Tbs. flour
- 2 Tbs. butter
- 1 teas. salt

Preparation
Step 1
With just enough water to cover first 5 ingredients, simmer about 1/2 hour. Add potatoes and milk and mash together.
To thicken:
In separate large pan, melt butter and add flour. Add milk and bring to a boil. Add mashed veggies and potatoes and let simmer for about 10-15 minutes. Stir often.
