Ingredients

  • 1 bag (15 oz) frozen seasoned potato wedges (we used Alexia Oven Reds)
  • 2 links (3 oz each) fully cooked fake sausage or bratwurst, sliced
  • 1 bag (16 oz) frozen sliced bell peppers and onions
  • 2 Tbsp chopped flat-leaf parsley or cilantro

Step 1

1. Heat oven to 425°F, Arrange potatoes in single layer on baking sheet coated with olive oil spray. Bake, turning once, until golden brown on both sides, 20 to 25 minutes. Halve larger potatoes.

2. Heat large cast-iron skillet coated with olive oil spray over mediumhigh heat while potatoes bake. Add sausage and brown, stirring, about 3 minutes. Transfer to plate. Add frozen vegetables and cook, stirring, until liquid has evaporated and vegetables are tender, about 4 minutes.

3. Add sausage, potatoes, and parsley to skillet. Season to taste. Cook, stirring, until heated through, about 2 minutes.
