Ingredients

  • 1 cup salad oil
  • 6 Tbs. rice vinegar
  • 1/4 cup sugar
  • 1/2 tsp. ground black pepper
  • 2 3oz. pkgs. chicken flavored ramen noodles
  • 4 cups finely chopped cooked chicken (about 1-1/4 lbs.)
  • 1/2 of a medium head cabbage, shredded (4 cups)
  • 3/4 cup sliced almonds, toasted
  • 1 small onion chopped
  • 1/4 cup sesame seeds, toasted

Preparation

Step 1

1. For dressing, whisk together salad oil, vinegar, sugar, pepper and contents of seasoning packets from noodles in a small bowl. Set aside.
2. Cook noodles in a large saucepan in a large amount of boiling water for 2 to 3 minutes or just until tender. Drain and transfer to a large bowl. Pour 1/4 cup of the dressing over the ramen noodles; toss to coat.
3. Add the chicken, cabbage, almonds, onion and sesame seeds to noodle mixture, and mix well.
4. Pour the remaining dressing over the salad. Toss to combine. Cover; chill at least 2 hours or up to 24 hours.
