- 2 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups mashed very ripe bananas (4 medium)
- 1 teaspoon vanilla
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs

Step 1
Preheat oven to 325. Grease 8-1/2 by 4-1/2 metal loaf pan.
In medium bowl, with wire whisk , stir together flour, baking soda and salt. In small bowl, stir together bananas and vanilla until blended.
In large bowl, beat with mixer butter and both sugars until light and fluffy. Beat in eggs one at a time. Reduce speed to low; alternately add flour mixture and banana mixture, beginning and ending with flour mixture. Beat batter until just blended.
Pour batter into prepared pan. Bake for 1 hour or until toothpick comes out clean. Cool loaf pan on wire rack for 10 minutes. Cool completely before slicing.
