Ingredients
- 3 cups tortellini, thawed or cooked
- 1 (6-oz.) jar marinated artichoke hearts, marinade reserved
- 2 6" zucchini, quartered & sliced
- 4 oz. mozzarella cheese cut in 1/2" cubes
- 3 oz. sausage cut in 1/4x2" strips
- 1 cup shredded carrots
- 1/4 cup parmesan cheese
- DRESSING
- artichoke marinade
- 1/4 cup vegetable oil
- 2 Tbs. white wine vinegar
- 1 tsp. oregano
- 3/4 tsp. basil
- 1/2 to 1 tsp. minced garlic
- 1/2 tsp. salt

Preparation
Step 1
Mix all salad ingredients together.
Shake all dressing ingredients together until well mixed. Toss with salad and refrigerate covered for several hours or over night. Toss before serving.
