Zucchini Tomato Pie

Ingredients

• 3 c. chopped zucchini
• 1 sm. can mushrooms
• 1 c. chopped tomato
• 1/2 c. chopped onion
• 1/2 c. parmesan cheese
• 1 1/2 c. milk
• 3 eggs
• 3/4 c. bisquick
• Salt & Pepper to taste

Preparation

Step 1

Heat oven 400° Grease pie plate and add zucchini, tomato, onion, cheese & mushrooms to pie plate. Beat milk, eggs, bisquick, salt, pepper until smooth-about 1 minute with hand mixer. Pour into pie plate. Bake until knife inserted in center comes out clean. About 30 minutes.
