  • For Garnish:
  • 1 pkg yellow cake mix
  • 1 pkg. (4 oz.) instant vanilla pudding
  • 1 (15 oz) Coco-Lopez cream of coconut
  • 1/2 cup + 2 Tbl. Rum
  • 1/3 c. vegetable oil
  • 4 eggs
  • 1 (8 oz) can crushed pineapple well drained
  • Whipped cream
  • Pineapple chunks
  • Maraschino cherries
  • Toasted coconut

Preparation

Step 1

Preheat oven to 350 degrees. In large mixing bowl, combine cake mix, pudding mix, ½ cream of coco, ½ c. rum, oil, and eggs. Beat on medium 2 min. Stir in crushed pineapple, pour into well greased floured bundt pan. Bake 50-55 min. Cool slightly remove from pan. With a table knife, poke holes about 1 inch apart in cake almost to bottom, combine remaining cream of coco & rum, pour over cake. Chill thoroughly, garnish. Store in refrigerator.
