  • 1/4 c unbleached all-purpose flour
  • 1-1/2 c whole milk, room temp
  • 1/4 tsp sweet paprika plus more for sprinkling
  • 1/2 c finely chopped Black Forest Ham (2.5 oz)
  • 1-1/4 c shredded Manchego cheese (4 oz)
  • 1 box (10 oz) frozen chopped spinach, thawed and squeezed dry

Step 1

1. Preheat oven to 425. Melt butter in med saucepan. Add onion, cook stirring, until softened, about 3 min. Add flour and cook, stirring, 1 min more. Add milk and whisk until mixture has thickened, about 4 min. Remove from heat; stir in paprika, ham, 3/4 c cheese and spinach. Season with s & p.

2. Transfer mixture to a 1qt baking dish Top with remaining 1/2 c cheese and sprinkle lightly with more paprika. Bake 10 min. Adjust oven to broil; broil until top golden brown, about 3 min. Let cool 5 min. Serve.
