Santa's Strufoli (doughnut holes)

Ingredients
- Honey coating:
- 2 C flour
- 1/4 C sugar
- 3 eggs
- 1/4 C vegetable oil
- 1 T grated orange rind
- Oil for frying
- 1/2 C sprinkles
- 1/2 C honey
- 1/2 T sugar
- 1/2 C grated candied orange peel

Preparation
Step 1
Honey coating:
In a large, heavy skillet, heat 1/2 C honey & 1/2 T sugar until mixture reaches 265* on a candy thermometer (or until it is sticky enoughto cling to a dough ball).
Allow coating to cool for 1 minute before testing its stickiness,
Stir in 1/2 C grated candied orange peel.
In a medium bowl, combine flour & sugar.
In another medium bowl, combine eggs, 1/4 C oil & rind.
With a wooden spoon, stir mixture into flour mixture to form a soft dough.
Place dough on a lightly floured surface.
Knead for about 3 minutes, until smooth & elastic.
Add more flour if dough is too sticky.
Flatten the dough until it is 3/4" thick.
With a knife, slice strips of dough into 1/2" lengths, thus creating small dough balls.
Fill a large skillet with oil 1/2" deep.
Heat. Iol to 375* on a frying thermometer( you can also test oil temp by making sure that it sizzles when you put a dough ball in).
Add one layer of dough balls to thr skillet.
Cook for 3-4 minutes, turning frequently, until light golden brown.
Place on paper towles to drain.
Continue with remaining dough balls.
Add fried dough balls to warm honey coating & stir well to coat.
Allow the mixture to cool just enough so that it can be handled comfortably with wet hands.
Stack strufoli a platter to form a pyramid shape.
Decorate with candy or sprinkles while still warm.
