Ingredients
- 4 boneless, skinless chicken breast halves (or boneless thighs)
- 2 (14 oz.) cans Italian-style stewed tomatoes
- 2 tablespoons cornstarch
- 1/2 teaspoon dried oregano
- 1/4 cup grated Parmesan cheese

Preparation
Step 1
Preheat oven to 425. Coat an 8-inch square baking dish with cooking spray. Place chicken in baking dish and bake 15 to 20 minutes.
In a saucepan, combine tomatoes, cornstarch and oregano cook over a medium-heat, stirring constantly until sauce thickens. Pour heated sauce over chicken and sprinkle with Parmesan cheese. Bake an additional 5 minutes (just long enough to melt the cheese).
NOTE:
Can top chicken with mozzarella cheese slices during last few minutes of baking.
