Ingredients

  • 2 Pie Crusts (Can make your own or use Pillsbury's) (
  • 2-3 Skinless, Boneless Chicken Breast (Boiled)
  • 1 Pkg. Mixed Vegetables (uncooked - frozen)
  • 1 Can Cream of Celery Soup
  • 1 Can Cream of Chicken Soup
  • 1 Can of Chicken Broth
  • 1 Large Russet Potato (Cut into small bites)
  • 1/2 Large Yellow Onion
  • 1 Clove (wedge) Garlic
  • Ground Thyme, Salt, Pepper, Onion Powder, Garlic Salt

Preparation

Step 1

Boil - 1 can chicken broth with a little water to cover chicken (I added poultry seasoning, ground Thyme, Salt, Pepper an a couple pieces of onion to broth)
Shred cooked chicken
Sauté 1/2 of large onion and 1 clove of garlic in garlic oil. Add a little ground Thyme, and pepper. Take off of heat.
Add chicken, vegetables, potatoes, both cans of soup over this mixture.
Place 1 pie crust in the bottom of a pie plate.
Pour mixture into the pie plate and put the 2nd pie crust on top and crimp the edges like a pie. I added a couple of slices in the top crust for steam to vent.
Bake in a preheated oven @ 325* for 1-1 1/2 hours.
