Ingredients
- 1 Tbsp. butter
- 1 small onion, diced
- 1 Tbsp. garlic cloves
- 1 cup green peppers, deseeded and chopped
- 1 jalapeno, deseeded and chopped
- 1 green tomato, core removed and quartered
- 1/2 lb. corn tortillas, cut into quarters
- 1 1/2 qts. chicken stock
- 1 tsp. dried oregano
- 1/2 cup heavy cream
- 1 small bunch cilantro, chopped
- Salt and pepper to taste
- 1 small roasted chicken, meat picked from bone

Preparation
Step 1
Sweat first 6 ingredients until tender over low gas heat. Add the tortillas, chicken stock, and oregano and bring to a boil. Simmer until tender. Add the cream and cilantro and bring back to a boil. Puree ingredients. Season with salt and pepper. Add the chicken meat. Garnish with tortilla strips, sour cream, and pico de galo.
