  • NON STICK COOKING SPRAY
  • 32 oz. frozen potato rounds
  • 1 lb. pork sausage
  • 10 eggs, beaten
  • 1 cup milk
  • 8 ounces Cache Valley & Monterrey Jack Cheese, shredded
  • 8 slices bacon

Preparation

Step 1

Preheat oven to 350 deg. Coat 13" X 9" baking dish with cooking spray.
Place potato rounds in baking dish. Cook bacon, drain and set aside.
Brown sausage, drain and arrange sausage evenly over potatoes.
Mix beaten eggs with milk, pour egg mixture over potatoes and sausage, sprinkle Cache Valley, Colby, and Monterey Jack shredded cheese over egg.
Crumble bacon over cheese, cover with foil, and bake for 40 minutes. Uncover and bake 10 minutes longer.
