Mix up a big batch of dough and bake some cookies and freeze the rest of the dough to bake later. Or you can make the dough and chill overnight to bake the next day.

Ingredients

  • 3 cups unbleached or all-purpose flour
  • 2 cups rolled oats
  • 3 tbsp. unsweetened cocoa powder
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups butter
  • 1 cup chunky peanut butter
  • 1 1/2 cups packed brown sugar
  • 1 1/2 cups granulated sugar
  • 3 eggs
  • 2 tsp. vanilla
  • 3 cups semisweet chocolate pieces

Preparation

Step 1

In a bowl, stir together the flour, oats, unsweetened cocoa powder, baking soda and salt.
In another bowl, beat butter and peanut butter with a beater. Add granulated sugar and brown sugar; beat well. Add the dry ingredients and stir until combined. Stir in the semisweet chocolate pieces.
Drop by generous teaspoonfuls onto uncreased cookie sheet.
Bake at 350 for 12 to 14 minutes or until done.
Let cool for 1 minute on the sheet before removing to a wire rack.
