Do It All Sugar Cookies

Ingredients
- 3 c flour
- 3 T cornstarch
- 1 t baking powder
- 1/2 t salt
- 1 c sugar
- 3/4 c unsalted butter, softened (1-1/2 sticks)
- 1/4 c canola oil
- 1 T vanilla
- 2 t lemon zest
- 1 egg
- 1 egg yolk

Step 1
Whisk together flour, cornstarch, baking powder and salt in a medium bowl.
Beat the sugar and butter on medium until light and fluffy, about 3 minutes. Add oil in a slow stream and beat on medium low until well combined, about 1 minute. Add vanilla and lemon zest and beat until combined. Add the egg and egg yolk, one at a time, beating well after each addition. Gradually add flour mixture; beat on low until evenly combined, about 2 minutes. The dough will be sticky. Turn the dough onto floured surface. Using floured hands, divide dough in half and shape each into a disk. Wrap each half with plastic wrap and chill until firm.
Bake at 350 for cut out cookies 8-10 minutes; for drop cookies toss in sugar and bake for 12-14 minutes; for thumbprint cookies, shape into 40 balls, toss into sugar, gently press centers, fill with 1/4 teaspoon of preserves or jam and bake for 12-14 minutes; for slice and bake shape each half of dough into 10" log, wrap with plastic wrap and chill until firm about 2 hours, roll in decorative sugar, cut into 1/2" slices, bake for 8-10 minutes.
