Chicken or Pork Chow Mein

Ingredients
- One whole skinless and boneless chicken breast (both sides) or 4 center cut pork chops or 1/2 combo of each.
- 2 very large onions
- 6 big stalks of celery
- 1 bag of bean sprouts.
- 1 carton of chicken stock
- 3 Tablespoons soy sauce
- 1 Tablespoon hot mustard (usually powdered)
- Salt
- 1/4 cup Vegetable oil

Preparation
Step 1
Slice the chicken or pork into very thin bite sized pieces and put a little salt on it.(slice on the diagonal)
Cut onion in half then make medium slices from that
Heat large pot or skillet and put in 1/2 the oil and cook quickly for about 3 minutes until the meat is done. It is thin so it cooks fast.
Add the meat back in and pour in enough chicken stock to cover.
Bring to a quick boil then simmer for about 20 minutes.
Turn off the heat and throw in the beansprouts and several splashes of soy sauce to taste.
