Ingredients
- 1 1/4 cups brown or red lentils
- 1 1/2 pounds sweet potatoes, peeled and diced in 1-inch pieces
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 teaspoons curry powder
- 2 teaspoons grated fresh ginger
- 1 1/4 teaspoons kosher salt
- 4 cups low-sodium chicken broth
- 1 to 1 1/4 pounds boneless, skinless chicken breasts
- For serving: plain greek yogurt, cilantro, naan bread

Preparation
Step 1
In a 4- to 6-quart slow cooker, combine the lentils, sweet potatoes, onion, garlic, curry powder, ginger, and salt. Add the broth and chicken breasts and turn to coat, submerging the chicken in liquid as much as possible.
Before serving, shred chicken with tongs or two forks; it should fall apart easily. If a thinner consistency is desired, add water as necessary and bring back to a simmer before serving. Top with a dollop of greek yogurt, chopped cilantro, and serve with warmed naan bread.
