Chicken with Balsamic and Sesame Oil

Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 3/4 lb. fresh mushrooms, cleaned & sliced
- 3 Tbsp. all-purpose flour
- 3 Tbsp. Sesame Oil
- 6 cloves garlic
- 1/4 c. Aged Balsamic Vinegar
- 3/4 c. chicken broth
- 1 bay leaf
- 1/4 tsp. dried thyme

Preparation
Step 1
1. Season the chicken with salt and pepper. Dredge the chicken breasts in the flour.
2. Heat the oil a skillet over medium-high heat and sauté the chicken until it’s nicely browned on one side, about 3 minutes.
3. Add the garlic. Turn the chicken breasts and scatter the mushrooms over them and continue sautéing, stirring the mushrooms occasionally.
4. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover tightly and cook over medium heat for 20 minutes, turning occasionally
5. Transfer the chicken to a warm serving platter and cover with foil to rest; set aside.
6. Continue simmering the sauce, uncovered for about 7 minutes and discard the bay leaf. Pour the sauce over the chicken and serve.
