Ingredients
- 1 cup creamy peanut butter (using regular peanut butter instead of natural is recommended)
- 2/3 cup brown sugar
- 2 tsp vanilla
- 2 eggs
- 2/3 cup oats
- 1 tsp baking soda
- 2/3 cup dark chocolate chips

Instructions
Preheat oven to 350 degrees. Lightly grease cookie sheets or line with parchment paper/baking mats.
In a bowl, whisk together oats and baking soda. Set aside.
In a mixing bowl, beat together peanut butter, eggs, brown sugar and vanilla until fully combined and smooth.
Gradually, add in oats mixture and mix just to combine.
Fold in chocolate chips.
Drop batter by the spoonful on cookie sheet approx 2 inches apart.
Bake for 8-10 minutes or until edges are lightly browned.
Let cookies cool for 5 minutes before removing from cookie sheet, then, cool completely on wire rack.
Approx 20 cookies
