Ingredients

  • 1 1/2 lbs. sirloin tips, pounded and cut into 1/2 inch pieces or strips
  • salt and pepper
  • 4 Tbs. oil
  • 10-oz. white mushrooms, sliced
  • 1 onion, finely diced
  • 2 Tbs. flour
  • 1 1/2 cups low sodium chicken broth
  • 1 1/2 cups low sodium beef broth
  • 1/3 cup brandy
  • 1/3 lb. wide egg noodles
  • 2/3 cup sour cream
  • 2 tsp. lemon juice

Step 1

Season sliced meat with salt and pepper.

Heat 1-2 Tbsp. oil in large skillet over medium high heat until just smoking. Cook half the beef until well browned, remove from pan and repeat with second half. Or if skillet is large enough do in one batch.

Heat remaining oil in now empty pan until just shimmering. Add mushrooms, onion and 1/2 tsp. salt and cook for about 8 minutes.

Stir in flour and cook for 30 seconds. Gradually stir in brolths, then brandy, and return beef to skillet. Bring to a simmer, cover and cook over low until beef is tender, about 30 minutes.

Stir in noodles, cover and cook, stirring occasionally, until noodles are tender, 10 to 12 minutes.

Remove pan from heat and stir in sour cream and lemon juice. Season with salt and pepper.
