Ingredients
- 1 TB Olive Oil
- 1 white onion
- 2 cloves garlic minced
- 1 TB cumin
- 1 TB chili powder
- 1 tsp cayenne pepper
- 15 oz can fire roasted tomatoes
- 2 c. chicken
- 1 can corn
- 1 can black beans, rinsed
- 4 c. chicken broth
- 3/4 c. heavy cream
- 1 c. pepper jack cheese, shredded
- 1/2 c. cheddar cheese, shredded
- sour cream for garnish
- crushed tortilla chips for garnish
- fresh cilantro for garnish

Preparation
Step 1
1. In a large pot or Dutch oven over medium heat, heat oil. Add onion and cook until tender and golden, 6 min., then add garlic, cumin, chili powder and cayenne and stir until fragrant, 1 min
2. Add fire-roasted tomatoes, corn, black beans, and chicken and stir until combined, then pour over check broth
3. Bring to a simmer and let cook, 15 min then stir in heavy cream, and cheese until melty.
4. Garnish with sour cream, tortilla chips, cilantro, and serve
