Ingredients

  • 1 box Triscuits
  • 1 tbsp. extra-virgin olive oil
  • 1/2 c. Chopped red onion
  • kosher salt
  • Freshly ground black pepper
  • 2 c. shredded rotisserie chicken
  • 3/4 c. barbecue sauce (plus more for drizzling)
  • 1 c. shredded Cheddar
  • 1 c. Shredded Monterey Jack
  • 3 green onions, thinly sliced
  • 1/4 c. pickled jalapeños

Preparation

Step 1

Preheat oven to 350 degrees F.
Spread crackers in an even layer on a large rimmed baking sheet (preferably 12"-x-17").
Heat olive oil in a large nonstick skillet over medium heat. Add onion and season with salt and pepper. Sauté until soft, about 5 minutes. Stir in chicken and barbecue sauce and cook until heated through. Turn off heat.
Spread barbecue chicken mixture on Triscuits. Top with both cheeses, green onions, and jalapeños. Bake until cheese is melted and the crackers are toasted, 10-15 minutes. Serve warm and drizzle with more barbecue sauce, if desired.
