  • 1/2 lb ground beef
  • 1 egg, beaten
  • 2 tbsp soft bread crumbs
  • 1 tbsp grated parm cheese
  • 1/2 tsp dried basil
  • 1/2 tsp onion powder
  • 5 3/4 cup chicken broth
  • 2 cups escarole, thinly sliced
  • 1/2 cup orzo uncooked
  • 1/3 cup carrot, peeled and finely chopped
  • granish, grated parm cheese

Step 1

combine beef, egg, bread crumbs, cheese, basil and onion powder in a bowl; shape into a 3/4 inch balls. heat broth to boiling in a dutch oven; stir in escarole, orzo, carrot, and meatballs. return to a boil; reduce heat to medium. cook at a slow boil 10 mins, or until orzo is tender to the bite. stir frequently to prevent sticking. serve sprinkled with parm cheese.
