  • 12 hard-boiled eggs, shelled
  • 1 cup flour
  • 3 eggs, beaten
  • 1 cup panko breadcrumbs
  • 2 tablespoons pickle relish
  • 4 tablespoons mayonnaise
  • 2 tablespoons mustard
  • Salt and pepper, to taste
  • Paprika, for garnish

These seem like an undertaking, but honestly, the hardest part is getting the shells off your boiled eggs! Once you do this, cut the eggs in half lengthwise and scoop out the hard yellow yolk into a large mixing bowl. Then, dip the egg whites in the flour, then egg wash, then the panko crumbs and set them aside.
To the bowl with the yolks, add the rest of your ingredients aside from the paprika and mix it all up until it’s smooth and creamy. Then, in your 350 degree fryer, allow your battered egg whites to get nice and crispy. This will only take 2 or 3 minutes.
Then, pipe or dollop your filling in, sprinkle with paprika, and you have yourself a throwback recipe with a definite twist.
