Ingredients
- 3 sweet potatoes, peeled, and cut lengthwise into 8 wedges
- 2 tbsp oil
- Kosher salt
- Freshly ground pepper
- 1/3 cup mayonnaise
- 1/4 tsp finely grated lime zest
- 2 tsp fresh lime juice
- Chopped fresh cilantro

Preparation
Step 1
Preheat oven to 450F. Toss sweet potatoes and oil on a foil-lined large rimmed baking sheet; season with salt and pepper.
Roast, turning once, until golden brown and crisp, 25-30 minutes.
Mix mayonnaise, lime zest and juice in a small bowl.
Season fries with salt, top with cilantro and serve with lime may for dipping.
