Sausage Ravioli with Butter

Ingredients

  • Filling:
  • Ground pork
  • spicy italian sausage
  • chicken thighs
  • top round or stew meat chunks
  • chardonney
  • pepper corns
  • swiss chard
  • fennel seed
  • red pepper flakes
  • thyme
  • garlic nutmeg
  • pecorino
  • basil
  • rosemary
  • eggs
  • bread crumbs
  • salt
  • pepper
  • Sauce:
  • Butter
  • garlic
  • salt
  • pepper
  • parm cheese
  • fresh parsley

Preparation

Step 1

brown spicy italian sausage and pork, set aside

Make slurry in blender:
chardonney
pepper corns
fennel seed
red pepper flakes
thyme
garlic cloves
nutmeg
salt
pepper
Blend and incorporate into sausage mixture. Refrigerate overnight

Two Baking trays
1. chicken, meat, drizzle with olive oil, salt and pepper. Roast for 30-40 minutes

2. onion, celery, garlic, drizzle with olive oil. Put swiss chard over top w/ salt and pepper. Roast for 30-40 minutes

Combine everything in large bowl, mix and then put in food processor to mix all together.

Make raviolis, then freeze overnight or at least for 3-4 hours.

Boil water, make raviolis, then put in pan with butter, garlic, salt, pepper, parm cheese. Plate and chop up fresh parsley for garnish over the top.
