Ingredients

  • 4 servings
  • 4 slices bacon, cut into lardons
  • 2 tablespoons olive oil, or duck fat
  • 2 garlic cloves (sliced)
  • 2 shallots (sliced)
  • 2 Fresno chilies or 1 Anaheim or jalapeno (seeded and sliced)
  • 1 pound hearty braising greens (tough stems removed) kale, swiss chard, mustard or beet greens (I used kale and red chard)
  • 1/4 cup sherry vinegar
  • Kosher salt
  • 1/4 cup wildflower honey
  • Tabasco sauce, to serve, if desired

Preparation

Step 1

* Slice the garlic, the shallots and seed and slice the chilies. Remove the tough stems from the braising greens.
* In a 6-quart saucepan over medium heat, cook the bacon in the olive oil until the bacon begins to render some of its own fat, about 5 minutes.

* Add the garlic, shallots and chilies and sweat them for about 2 minutes. Add the greens and reduce the heat to low. Add the vinegar, a large pinch of salt and the honey. Simmer, partially covered, until they’re tender, about 1 hour. Season to taste with salt and Tabasco sauce, if desired.
