28/12/16 - I liked this although it was rich and it's really 9 servings, not six, which I've corrected. Jury is still out though because Dan wasn't feeling well and didn't eat.

HAM****Ham and Leek Pot Pies 1 Picture

Ingredients

  • 2 tablespoons unsalted butter, cubed
  • 2 tablespoons EVOO
  • 2 thinly sliced leeks (white and light green portion only)
  • 1 medium red onion, thinly sliced
  • 1/2 pound sliced fresh mushrooms
  • 3 medium carrots, sliced or cubed
  • 1/2 cup all-purpose flour
  • 1-1/4 cups 2% milk
  • 1-1/4 cups chicken, ham or vegetable broth
  • 2 teaspoons dijon mustard
  • 6 1/2 ounces cubed Grandpa ham
  • 11 oz. Tarini's Canadian bacon
  • 2 tablespoons minced fresh parsley
  • 1/4 to 1/2 teaspoon ground nutmeg
  • Dash pepper
  • Gruyere Biscuit Topping for Pot Pies or Cornbread for Two, for topping (recipe called for puff pastry, which neither of us cares for)

Preparation

Step 1

In a large saucepan, heat butter and oil over medium-high heat. Add leeks, mushrooms and carrots; cook and stir until tender, 15 to 20 minutes.

Stir in flour until blended. Gradually stir in milk and broth. Bring to a boil over medium heat, stirring frequently; cook and stir 2 minutes or until thickened. Remove from heat; stir in mustard, ham, parsley, nutmeg and pepper. Taste and adjust seasonings.

Divide into three (four) portions, freezing two (three).

To serve, preheat oven to 425°. Divide mixture between individual ramekins and top with topping of choice.

Bake 18-22 minutes or until golden brown. Let stand 5-10 minutes before serving.
