Mochiko Double Chocolate Cookie

Use mochiko flour for a light crunchy cookie. Makes 2 dozen.

Ingredients
- 1 1/4 C flour
- 3/4 C mochiko flour
- 1 t baking powder
- 2 T unsweetened cocoa powder
- 2 T water
- 1 C butter
- 3/4 C sugar
- 2 t vanilla
- 1 C semisweet chocolate chips

Preparation
Step 1
Heat oven to 350*. Line cookie sheet with parchment paper
Combine flour, mochiko and bp. Dissolve cocoa powder in water in separate bowl. Cream butter and sugar until fluffy. Add vanilla and dissolved cocoa. Slowly add flour mixture, mixing well. Fold in chocolate chips. Scoop by Tablespoons onto prepared sheet and Bake 15-20min.
